Wines of Austria and Germany with Brian Freedman, Food and Wine Writer/Consultant
It’s ein klein wine time! COOK’s go-to wine guru, Brian Freedman, will take us on an armchair journey to Germany and Austria for some truly unique and delicious wines. Austria (known for its dry, white wines primarily) and neighbor Germany have rich wine producing cultures that include but are not limited to known varietals such as Grüner Veltliner and Rieslings. So grab your lederhosen and come ready to eat and drink. A German-inspired meal will also be served.
If you’ve never attended a Brian Freedman night at COOK, you’re in for a treat. Brian literally travels the globe, personally selecting (and sampling) wines for events like this. On average, Brian selects five wines for the evening’s tasting, which is complemented by a full dinner menu. years. Brian has been featured in live television segments from New York to San Francisco, spoken at conferences and conventions across the country, and has made two live appearances on Martha Stewart Living Radio on SiriusXM to discuss wine. He has consulted on wine lists for award-winning restaurants and dinners at the James Beard House in NYC, worked with Wine Chateau to run wine tastings at the GBK gift lounge in Los Angeles for invitees to the Emmy Awards, the Golden Globes, and the George Lopez Celebrity Golf Classic, and has visited nearly two dozen countries to explore food, drink, and culture. He was recently selected the first Albariño Explorers Club Ambassador for the Albariño wines of Rias Baixas, Spain.

Cajun Cooking 101 with John Mims of Carmine’s Creole Café
Craving Creole? Then this is the class for you! Join Chef-restaurateur John Mims for a night of Louisiana cooking right here at COOK! Chef John recently reopened his Cajun-style restaurant in Narberth, after leaving in 2006. Think lots of hearty seafood and shellfish dishes in both the Cajun and Creole traditions. Laissez les bon temps rouler!
Although the class menu is not yet finalized, here are selections from Carmine’s Creole Café menu, just to whet your appetite: Crab Bisque; Shrimp and Crawfish Etouffee; Butter-Roasted Chilean Sea Bass and Crispy Coconut Shrimp; Jambalaya with Roasted Chicken, Andouille Sausage and Shrimp; and Pan-Roasted Pork Loin Topped with Mole Sauce.

What’s For Gluten-Free Dinner? with Genevieve Sherrow AKA The Gluten-Free Warrior
Gluten-free living sure can be delicious. In this class, Genevieve Sherrow will show you how to make simple and nourishing gluten-free dishes that are sure to be the perfect end to a long day. Her book, Gluten-free Warrior, is a therapeutic whole foods cookbook designed for individuals with gluten and wheat allergies. Inspired by Indian, East Asian and Contemporary North American cuisines, the book includes 60 hand-crafted, field-tested and carefully researched recipes featuring warming breakfast porridges, egg scrambles, soulful soups, uniquely inspired vegetable sides, and satisfying main dishes. Her menu will be farm-inspired and seasonal.
Genevieve holds a Master of Science in Nutrition from Bastyr University, one of the world’s leading centers in the natural health sciences. She has been living gluten-free for 6 years and uses a whole foods approach to gluten-free cooking and focuses on foods that are naturally gluten-free, nutritionally strong and delicious! She is also Adjunct Faculty in the Culinary Arts and Food Science Department at Drexel University.
