Let It Brie!

Meet our fave snack of the moment: Ballyhoo Brie from Plymouth Cheese. This creamy, soft ripened Vermont brie is super versatile – enjoy it with savory accompaniments, something sweet or all by itself! Founded in 1890 in Vermont by Colonel John Coolidge, father of President Calvin Coolidge, Plymouth is the second oldest cheese factory in the United States. After generations in the Coolidge family, cheesemaker Jesse Werner bought the business in 2009, fulfilling a lifelong dream. Today, Jesse’s cheeses are made by hand — just like they did more than 125 years ago on the Plymouth homestead. Plymouth’s Ballyhoo Brie is officially one of the best bries in the country, having received a silver medal at the American Cheese Society competition.

Where there’s cheese, there’s crackers, right? New at CORK are two varieties of Diplomata Crackers – sesame and oregano. Hand made in Portugal, they’re vegan and entirely sugar-free. Go the extra mile with spreads from Nicolas Vahé, available in sweet and savory flavors. We personally recommend the Chutney with Tomato, Apple and Chili, as well as the Damon Plum Spread with Walnut and Apple.

Last but certainly not least: wine. Here are three of our personal favorites for enjoying with Ballyhoo Brie:

Pet’ Mout’ Chardonnay Pét-Nat
Elegant and fresh nose of citrus fruits, white flowers and minerals with a balanced acidity that showcases the wine’s aromatic softness.

Lamoreaux Landing Dry Rosé 2021
This dry rosé from New York’s Finger Lakes presents subtle fragrances of lavender and citrus. A bit of watermelon on the palate, it’s a bright and refreshing rosé that goes down almost too easily.

Mary Taylor Beaujolais-Villages
Hand-harvested Gamay from the Rhône Valley, pressed slowly and softly in what is known as the Burgundy style. With notes of red fruit and cherry, it’s perfect for bloomy soft cheeses like Ballyhoo Brie.
