Ball On The Square

If you had a chance to walk around Rittenhouse Square at any time last week, you probably noticed a giant white tent in the middle of it. Your first thought was probably “Wow! I wonder what that tent is for.” And your second thought was probably, “Wait! Why cant I walk through the park!?!?” Well, the answer to both these questions is the annual Ball On The Square.

Warning: Smoking Is Addictive

This year I was given the mission and responsibility of providing Thanksgiving dinner with its main attraction – the turkey. It was a great honor indeed that my friends believed in my cooking skills enough to trust me with such a task. But then I realized that I’ve cooked many birds in my life of many shapes and sizes, but I have never handled anything like a turkey before, and I have no idea how to cook something of its proportion in my oven…? What to do, what to do? How do I make sure I don’t screw it up? What happens if it comes out dry or, God forbid, undercooked? Thanksgiving will be ruined!

Dispatch from Rick Nichols: A Man and his Market

Next week (June 18-23) marks the Reading Terminal Market‘s Renovations Dedication Week. The public is invited to join the Market as it celebrates the completion of its recent renovations with a week of special events (all of which are free) celebrating the Market and its place in Philadelphia’s vibrant food scene. To kick it all off, there will be a ribbon cutting and unveiling of a Market History Exhibit on Monday, June 18th at 10:00am in the newly created Rick Nichols Room (see the entire schedule of Dedication Week events below). So who else did we ask to write an ode to the beloved market? Well, none other than COOK’s dear friend, Rick Nichols himself.

Thirty-four years ago there was a bit of Hunger Games aspect to our weekly shopping treks to Reading Terminal Market. We lived in a third-floor walk-up loft on the corner of Third and Cherry, part of the first wave post-industrial types trickling into Old City. And, well, we soon realized that we had to eat.

No grocery stores there yet. (Though a corner grocer moved in eventually, I think on Bread Street, or Quarry.) No supermarkets. Hadn’t been a need. But 10 blocks away there was the Reading Market, shabby and beaten down, something of a no-man’s land. That gave it, frankly, a touch of romance (if you were young enough, and pushing the urban envelope). So we’d hike over there, load our brown-paper shopping bags to the brim, and hike back, the twine handles slowly gouging a grove in our fingers: You had to suffer for your supper.

Le Bec Fin 2.0

When Georges Perrier opened the doors on Walnut Street’s haute cuisine mecca, Le Bec Fin forty years ago, he single-handedly started a restaurant revolution in this city that is still going strong today. Next week, when new owners Nicolas and Fazilet Fanucci re-open the doors of the dining institution to the public, chances are, Le Bec Fin 2.0 will once again change face of dining in Philadelphia.

COOK had the distinct pleasure of being invited to the see the renovated space during the final stages of construction last week. We took a few less-than-Leibowitz-esque pics on our phones but it gives you a sense of the major team effort going on to get the new Le Bec Fin ready for its close-up.

A Conversation with Dean Carlson of Wyebrook Farm

Dean Carlson of Wyebrook Farm kicked off an exciting collaboration with COOK this month to connect Philadelphia food-lovers with sustainable meat, produce, and dairy products from Chester County. COOK’s own Audrey and Lily had the pleasure of touring the farm in late April and welcomed Farmer Dean and his chef Janet Crandall for a pork-centric class at COOK last week featuring that fine looking porchetta.

Last Monday night was the FEASTIVAL* Patron Party at Percy Street Barbecue and so many of COOK’s instructors were there. We hung out with James Beard Foundation Award winner and host with the most Michael Solomonov and his right-hand woman there at Percy Street, Erin O’Shea. Peter Woolsey of Bistrot La Minette, Rob Wasserman of Rouge, Michael Schulson of Sampan, David Lipson and Jason Sheehan of Philly Mag, Art Etchells from Foobooz, Michael Klein from philly.com/food, Georges Perrier – and several others were all there to celebrate with FEASTIVAL’s sponsors.
