“What do you call a chef who only knows how to cook with four ingredients…?”

“A PASTRY chef!” (Ha ha! Ba dum, ching! Ahem…)

But seriously, it’s amazing how many different directions you can take a few simple ingredients, and nobody knows this better than pastry chefs. How do they get such stunning results, such fineness and variety, with just sugar, eggs, butter, flour and a few other odds and ends? The answer, I’d say, is “technique.” While all cooking requires some kind of technique, pastry is really, truly about technique.

Keeping It Kosher: A Look Back at Bubby’s Cook Off

For the past few wintry weeks, I’ve been reminiscing about my mom’s home cooking. Coming from an Israeli/European/Jewish home, I yearn for a rather specific variety of comfort food–one that is hard to find around this area. So when I found out that COOK owner Audrey Claire Taichman was going to be one of the judges at an all-kosher Jewish cooking competition I was very excited. It was as if someone had heard my prayers and decided to create this event with the sole purpose of satisfying my own personal hunger.

COOK Masters Program: Getting Into Wine with Brian Freedman

In culinary school I ran a wine club called “Uncorked!” (I know, so damn clever, right?) I had some pretty good wine teachers, too, so I already knew a fair bit about wine when I walked into Brian Freedman’s class and practicum on wine tasting. I was very pleasantly surprised, though, by the river of truly useful, well-framed information and advice he offered. Many people are passionate and knowledgeable about wine, but Freedman sets himself apart by being an engaging speaker and a skilled teacher, too. (His Master’s Degree in Education probably helps, too.) Plenty of sommeliers and wine geeks can direct you to a few choice bottles, but an enthusiastic educator like Freedman is a much more rare, and more helpful, kind of person to find. If I were to give him a mantra, I’d recycle that old cliché about fish and fishing: “Tell a man what bottle to buy and he’ll have a good drink; teach him how to understand wine and he’ll drink well all his life.”

It would be impossible in this limited space to bottle up and label everything Freedman had to share, so let me just pour us a few glasses of the more significant lessons of the day.

Notes from a Kitchen-Classroom: COOK Masters Program Now in Session

This week was biggie. Not just for us at COOK but also for the 10 lucky (and very enthusiastic) students who participated in our inaugural class session of the COOK Masters Program. Not familiar with CMP? In a nutshell, CMP is an instructional cooking series taught by some of the city’s and country’s biggest culinary names, for 10 students who are truly passionate about pursuing a professional career in the restaurant industry. The first semester is being taught by Jon Cichon (Lacroix), Joe Cicala (Le Virtu), Peter Woolsey (Bistrot La Minette), Christina Diekwicz (Barclay Prime), Katie Cavuto Boyle (Healthy Bites), Brian Freedman (food and wine writer/consultant), and Michael Solomonov (Zahav, Percy Street Barbecue, Federal Donuts, Citron & Rose).

A Fair Food Feast

What better venue for the first-ever Fair Food Feast than Talula’s Garden, that idylllic culinary oasis in our concrete jungle, located on Washington Square and co-owned by Fair Food Member Aimee Olexy. Aimee, a prominent figure in the local food movement in Philly, is no stranger to COOK, having taught a memorable class in March of 2012 (see the photo gallery). On December 3rd Aimee was joined by co-hosts Judy Wicks (founder of White Dog Café and Fair Food Philadelphia) and Michel Nischan (founder and President of Wholesome Wave and celebrated locavore chef) as well as a who’s-who of the locavore scene, gathered to not only raise funds for Fair Food but also to celebrate the organization’s remarkable achievements, sample local fare, and finally meet the farmers and producers, adding a human element to the farm-to-table journey of our food.

An Evening with Danny Meyer and Carmen Quagliata

Last Thursday, COOK was honored to host its second Visiting Chef Series class, this time with Danny Meyer, CEO of Union Square Hospitality Group, and Executive Chef Carmen Quagliata of Union Square Cafe. The evening was everything we hoped it to be (and more!) and before we say anything else, we want to personally thank Danny and Carmen for coming down to Philadelphia, for an incredible meal, for sharing words of wisdom gained from an extraordinary career, and for an evening that all in attendance will never forget.

Going Solo

It’s finally Friday folks! It’s time to pack your bags for one last weekend at the beach.
