Short Order COOK: Joncarl Lachman

Welcome to Short Order COOK, our weekly check-in with chefs around town. Every Wednesday we’re chatting with your favorite Philly chefs to find out what they’re eating, watching, cooking and what’s in their fridge!

Are you offering takeout at Noord and Winkel?
Winkel is currently closed, but we continue to work on ideas for a reopen  that would be connected to feeding the hospital workers in the area. Noord is open for takeout: 3-course, $25 Dutch Dinners on Friday and Saturday. We post the menu online and on Instagram on Wednesday mornings and you pre-order by email (bob@winkelphilly.com). Jonnathan Yacashin has also been selling loaves of his handmade bread on Mondays out of the window on the 11th Street side. We will be adding house-whipped butters and seasonal jams to the mix next week.

Have you been experimenting with new ingredients during quarantine?
I have not spent much time experimenting with new ingredients, but what I have done is reconnect with the reason I started doing this job in the first place. I do all the main preparation myself. Curing and smoking fish, making soups, stews, and vinaigrettes. The large pots of zuurkool, snert, Dutch brown beans, boerenjongens, hete bliksem, stamppot, roasted root vegetables, and creamy barley remind me of the satisfaction and joy of cooking from my background and culture.

Any guilty pleasure foods you’re willing to admit?
Oh lord, so many. I have been eating a lot of anchovies right from the tin.anchovies straight out of the tin. They are from Samuels and Son, a local wholesale vendor who recently started home delivery via their retail arm Giuseppe’s Market. Also, Apple Jacks, Lucky Charms, and canned soups top the list.

What cookbook would you recommend to the home cook?
The big book Larousse Gastronomique is a fantastic book that gives you all the basic techniques, history, and tradition of food and food combinations from different cultures. It’s an incredible foundation to start with, then just let your mind run wild.

Any TV shows, books, or podcasts that you’ve enjoyed recently?
I am a news junkie, so in a time like this we are spending a lot of time keeping ourselves as informed as possible. Also, finally watching The Plot Against America on HBO, intense and riveting. On a light note, it’s always a celebration of love to watch RuPaul’s Drag Race!

Where is the first place you’re going out to eat once quarantine is lifted?
Jaxon is my favorite restaurant (besides my own) in Philadelphia. I so look forward to a relaxing Monday with a couple bottles of bubbles celebrating with Tony and Paulie.
