The In-Cider Scoop

There’s wine, and there’s beer. Then there’s cider, bridging the gap between the two camps. A crisp, refreshing option for the summer, cider comes in many forms – sparkling, dry, off-dry, rosé and more. Here’s a breakdown of the ciders currently available at CORK. Shop in-store daily from 11AM to 8PM or reserve online for curbside pick up.

PLOUGHMAN FARM CIDER

Based not too far away in Adams County, PA, Ploughman produces ciders from a single source – apples harvested from the abundant orchards at the 200+ year old Three Springs Fruit Farm.

Stark, Ploughman’s debut release, is made from Stayman and Spitzenberg apples, both heirloom American varietals. Its citrusy, fruit-forward notes are reminiscent of a German radler—a shandy of juice and beer. Off-dry and crisp, enjoy this one as you would a glass of wine. 

Ploughman’s Muhibbah – a Malay word meaning cross-cultural harmony – was inspired by a series of collaboration dinners with Malaysian chef Ange Branca and cheesemaker Jamie Png. This one is a dry cider infused with makrut lime leaves, star anise, cumin and coriander.

Arkansas Black is Ploughman’s first pet-nat and the official start of their new single varietal series focusing on the fermented characteristics of individual apple varieties. Arkansas Black brings a big juicy, tropical nose with notes of pineapple, melon, mimosa. It’s the youngest cider they’ve ever released, bright and vibrant – pressed in November, released in June. 

DRESSLER ESTATE

Dressler Estate is known for their wine-like ciders made in the heart of Chester County, PA. Dressler’s Modern Sparkling is earthy with a slight haze, pairing well with aged cheeses and brunch dishes. Dressler’s Golden Rosé is co-fermented using one pound of fresh strawberries per gallon of their Lancaster-grown apple cider. Ripe strawberry aroma with a delicate sweetness and a hint of fresh roses.

SON OF MAN

Oregon-based Son of Man’s Sagardo is inspired by the generations of Basque cidermakers in Northern Spain. Sagardo has the perfect balance of tropical fruit flavors, prickly acidity and funk, making it the ideal bottle for the dinner table. Wild-fermented and without added sulfites, Basque cider is as natural as it gets. Pour the cider from a height to aerate and carbonate, then drink with funky cheese, salty oysters on the half-shell or rare meat off the grill.

CAVE DE LA LOTERIE

Normandy is France’s apple orchard, so it should come as no surprise that Normandy cider is ooo-la-la! Cave de la Loterie is an organic cidery that employs natural fermentation practices. Their pale yellow Cidre Brut-Corsé is made from sweet and bittersweet apples. Its full body can stand up to hearty, meaty fare!
