The summer weather has finally arrived and here at COOK we celebrated with a destination beach getaway with our good friends Laura Frangiosa and Maureen Stoebenau of The Avenue Delicatessen. Take a look at what they served up!
To start, we enjoyed some delicious tuna ceviche served with plantain chips.
Next up: Tamarind Pork Skewers with a green papaya salad on the side.
Our third course was jerk chicken wings with grilled pineapple and black bean salsa.
Things really got interesting when Laura showed us how to make soft shell crab.
The crispy soft shell crab was served over coconut rice, veggies, and red curry sauce.
A vacation themed dinner wouldn’t be complete without a beach-y desert. This delicious key-lime pie was a sweet ending to a great dinner!
