Cookbook author Domenica Marchetti made a visit to the COOK kitchen this week to share some recipes from her newly published book “Preserving Italy” and trust us- you NEED this book! Her book is filled with all you need to know on preserving, curing, and infusing, the Italian way. Take a look at some of the wonderful dishes she made for us.
We started off the meal with crostini with sweet and sour peppers and mozzarella cheese. The peppers were preserved for a few days prior to class.
The second course consisted of homemade chittara noodles and fresh tomato sauce topped with parmesan and ricotta salata. Domenica demonstrated how to roll out pasta dough and use the chittara to cut the noodles. The end result was delicious!
For our main course, Domenica made tuna tagliata served with a fresh salad. We cleaned our plates pretty quickly with this one.
To complete the meal, Domenica made her “Favorite Jam Crostata” from her cookbook and served it with vanilla ice cream over top. Look at the craftsmanship of that crust!
