Jim Burke was a regular chef at COOK, wowing guests with his culinary talent. A Vetri alum, Jim opened James in 2007 with his wife Kristina, earning high praise from Inquirer critic Craig Laban. Most recently, Jim led the kitchen at Wm. Mulherin’s Sons in Fishtown.
Jim and Kristina became regulars at CORK as well, often with their kids Dan (aka Danimal) and Sadie (aka Sadie-bird) in tow, a foursome known as Team Burke. When selecting a wine for September’s fundraiser, this was a no-brainer. Meet Jim’s go-to red at CORK – Ottosoldi Barbera del Monferrato. This luscious Barbera from Piedmont has an intense ruby red color with aromas of red fruit, mint and vanilla. Its full flavor is both soft and rich, with a fresh and fruity final note. Perfect with red meat but also a stunning pizza pairing.
