There’s been a chill in the air the past few days, signalling the official arrival of the fall season. With that in mind, we know you’ll be searching for those great seasonal ingredients to incorporate into your cooking. Joshua Bullock of Farmer’s Keep recently stopped by our kitchen and gave us an easy and delicious recipe for his fall harvest salad that we know you’ll love!
Fall Harvest Salad
Salad:
6 oz mixed greens
1/2 cup dried cranberries
1/4 cup pumpkin seeds
1/2 cup roasted sweet potato
1 bunch chives, cut
Mix all items together, dress to desired amount.
Roasted Sweet Potato:
1 small sweet potato, small dice
Lightly coat with oil and a pinch of salt and pepper. Roast at 375 degrees for approximately 15 minutes.
Sesame Miso Dressing:
1 cup white vinegar
1/2 cup honey
2 tbsp ginger powder
1 tbsp lime juice
8 tbsp miso paste
2 tbsp dijon mustard
4 tbsp soy sauce
1/4 cup sesame seeds
1 1/2 cup sesame oil
Blend all ingredients together except oil. Once blended, slowly blend in oil.
